Three that I've done that anybody might like to try: cherry/chipotle glaze, great on pork tenderloin; carmelized marmalade--I got distracted after adding the sugar to the kettle and realized too late!!--but it was wonderful, and never successfully repeated...and cranberry/carmelized garlic.
