Winter is a great time for jam experimentation!
The two flavors we are working on are an orange and chocolate marmalade and two flavors with beer: a lager and rhubarb jelly and a stout and cocoa nibs jelly. We happened upon a jar of beer and cocoa nibs jelly once in Italy, and have remembered the amazing flavor ever since. We're experimenting with beer from our friends over at Sixpoint Craft Ales and I'll be planting some rhubarb up at the farm, or on the roof of our jam factory once the earth thaws. Rhubarb is a wonderful flavor and will feature in one of our new Spring flavors.
