Wing Sauce (How to use your hot sauce)

Summer-summer-time! Aka, wing time. I love grilled chicken wings so much. I love grilling them low and slow, and then tossing them in the wing sauce.

  • 2 pounds (900g) chicken wings, cut into drumettes and flats

  • 2 teaspoons (10g) baking powder or corn starch

  • 2 teaspoons (10g) kosher or sea salt

  • 4 tablespoons (50g) unsalted butter

  • 4 tablespoons (60ml) your favorite hot sauce

  • Raita or blue cheese, for serving

  • Celery and carrot sticks, for serving

Toss wings with salt and the baking powder.

Grill low and slow over a grill, or bake for 45 minutes.

Meanwhile, combine butter and hot sauce in a small saucepan and cook over medium heat, whisking until combined. Transfer wings to a large bowl, add sauce, and toss to thoroughly coat.

Serve with raita or blue cheese, and some celery and carrots to balance the heat.
